Salmon l'orange is a simple recipe of fresh salmon fillets poached in orange juice and white wine with some spices. It's such a simple dinner and only takes 1 hour to marinate and 15-20 minutes to cook so it won't eat up your day with prepping it. It's also healthy too and everyone is on the salmon for health bandwagon. I'm not going to argue, it's good for you but not all the time. Everything in moderation.
Salmon a l'Orange
1 5oz piece of salmon for each diner
1/2C Fresh Squeezed Orange Juice
1/2C White Wine (Noilly & Pratt Dry Vermouth)
3 Cloves Garlic, Peeled & sliced in half lengthwise
3 Fresh Basil Leaves torn into pieces
1 Slice Red Onion, broken into rings
A couple orange slices (optional)
Season your salmon with fresh ground black pepper and some kosher salt. In a covered casserole combine the orange juice and white wine. Arrange the salmon skin side down in the pan and add garlic to liquid. Top salmon with onion slices, basil and orange slices (if using). Marinate in fridge 1 hour. Bake in 375° oven for 15-20 mins until done. Serve with vegetable on the side and a garden salad.
