Amish Style Apple Sausage Stuffing


This recipe was clipped from a newspaper back in the 40's by my grandmother.  It sat in her recipe box until finally coming into my possession after my mom's death in 2006.  I've revived it from the archives of the past since then and enjoys a place at the feast every Thanksgiving and Christmas.

Amish Style Apple-Sausage Stuffing

1lb Sausage
1/2lb Bacon, diced
1 large onion, diced
1C Chopped celery
1/2lb Mushrooms, sliced
2 apples, cored and diced
1C Chopped fresh parsley
1tsp each Sage and Thyme
1 (1lb) loaf firm white bread, cubed
2C Chicken broth
salt and pepper to taste

In a large skillet, fry sausage and bacon until crisp and brown.  Add Onion, mushrooms, celery, apples, parsley and herbs.  Saute, stirring occasionally, for 5 mins.  Stir in bread cubes and chicken stock and season to taste with salt and pepper.  At this point you can stuff a 10-12lb turkey or just bake in a casserole  at 350° for 1 hour.

This is a very flavorful stuffing and is always a big hit with guests.  It gets better the day after it's made as all the flavors meld together so don't be afraid to make it a day ahead of time.
